HOLIDAY BUCKEYES

Healthy Holiday Buckeye Recipe

Buckeyes
1 cup drippy, all-natural peanut butter (we used Kirkland All-Natural)
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/3 cup shredded coconut, pulsed in food processor
1/2 cup vanilla protein powder (we used Tera’s Whey)
2 tablespoons maple syrup*

Chocolate Coating
1/2 cup dark or dairy-free chocolate chips
1 teaspoon coconut oil

Topping
1/2 cup sprinkles

HEATHLIER NO-BAKE COOKIES

Healthier Chocolate No-Bake Cookies

1 cup natural peanut or almond butter
1/2 cup coconut oil
1/2 cup honey
2 teaspoons vanilla extract
1 cup bittersweet chocolate chips
2 1/2 cups quick cooking or old-fashioned oats (see note)
3 tablespoons cocoa powder
1 cup coarsely chopped almonds

NO-BAKE GINGERBREAD PUMPKIN SNOWBALLS

No-Bake Gingerbread Pumpkin Snowballs

-2.5 cups almond meal
-1 tablespoon cake spice
-1 teaspoon cinnamon
-1/4 teaspoon ginger
-1 tablespoon molasses
– 1/4 cup pumpkin puree
-2 tablespoons brown rice syrup (I used maple syrup)
-1/2 cup powdered sugar

SKILLET-ROASTED MAPLE CINNAMIN PECANS

Skillet-Roasted Maple Cinnamon Pecans (Vegan, Paleo, Gluten Free, Dairy Free)

2 tablespoons coconut sugar
2 tablespoons pure maple syrup
½ teaspoon ground cinnamon
¼ teaspoon salt
2 teaspoons coconut oil
2 cups unsalted pecan halves
